Guest Post: Summer from The Crosbie Crew

Hey everyone!  My name is Summer and I'm coming to you from the Crosbie Crew.  I'm going to share my favorite recipe for bruschetta that my hubs makes for us. Its super yummy and fresh!  This recipe is enough for 2 people so share it with the one you love.

-2 Roma tomatoes 
-5 fresh basil leaves
-minced garlic
-olive oil 
-parmesan cheese
-salt & pepper
-a french baguette

 -Heat up a non-stick skillet and pour in about a teaspoon of olive oil and minced garlic.  You are just going to brown the garlic. Place the browned garlic into a bowl when done.
-Dice up your tomatoes and basil and place it into the bowl with your garlic.
-Add a dash of salt and pepper.  Drizzle a little olive oil into the bowl.
-Mix everything together.  Set aside.

-Take your french baguette and slice it up on a slight angle.
-Brush both sides with olive oil.
-Place bread on a heated non-stick skillet and cook both sides until a nice golden brown.
-Place the bread on a plate, put a nice helping of the tomato mix on each piece and then sprinkle some fresh parmesan cheese on top!
